Secret to Great Chicken Soup


At four a.m.
I jump out of bed,

could smell it
left soup stock heating on back of stove since 7 p.m.
not just simmering,
at medium heat.

When you are in your twenties you wonder if this is inexperience.
When you are in your fifties you wonder if this is aging.

The whole house smelled of unmade soup,
the pan still warm at breakfast time.

It made excellent soup.
